デラウェアの仕込みが一段落して、お盆前に仕込んだワインの粗濾過作業です。今年の「赤湯ヌーヴォー(白)」になるタンクから始めています。呑み口を開けるとデラの甘い香りが蔵の中に漂います。今度は仕上げ濾過をして瓶詰めに移ります。
